The cornmeal in these gives the waffles an extra crunch. Serve them with yogurt
cream, or ricotta cheese with a little sugar and vanilla added in. Top with fruit.
- 1 2/3 cups Bisquick® baking mix
- 1/3 cup cornmeal
- 2 tablespoons flax seed, ground
- 1 1/2 cups milk, 1% low fat
- 1 teaspoon vanilla extract
- 2 large egg
- 2 tablespoons butter, melted
- Mix all ingredients together.
- Pour into hot waffle iron (sprayed with non-stick spray).
- Bake until steaming stops.
Yogurt Cream (for topping)
- 1 cup yogurt cheese (Greek style yogurt, plain no fat)
- 1 teaspoon vanilla
- 2 tablespoons turbinado sugar (raw sugar)
- 1 cup peaches, sliced
