Pumpkin Mousse
Serves 4
15 ounces pumpkin
1 cup whipping cream
2 tablespoons pumpkin pie spice
3 tablespoons turbinado sugar
1 teaspoon vanilla
2 tablespoons chopped pecans (or a dozen whole pecans)
Whip cream until peaks form. Fold in all other ingredients except pecans. Serve in small dessert bowls and top with pecans.
